Taught by our Head Chef, Jake Pinn, our intensive Chalet Cooks courses are hands-on and practical and teach our students to cook and present food to a fine-dining standard. We have created our courses in conjunction with gourmet Chalet Company Fish&Pips who are renowned for their first-class food and service. We pass this passion for great food and service on to our students! We make sure that our courses are useful, hands-on, practical and most of all fun!

typical day What's it like

A typical day on this gap year project

Our Chalet Cooks start the day cooking a delicious breakfast – fit for a day on the slopes! After breakfast, our students will cook a 3-course meal which they will enjoy together for lunch, they will have a well-earnt break before heading back to the kitchen to cook another mouth-watering 3-course meal. During the week we also include a half-day session on cakes and one on canapés.

Sample Chalet Menu:

• Breakfast special: Eggs benedict

• Afternoon tea: Chocolate brownies

• Canapé: Pork and prawn gyozas with a soy and ginger dipping sauce

• Starter: Ham hock terrine

• Main course: Supreme of chicken with herb gnocchi, cherry tomatoes, capers and basil

• Dessert: Apple Tarte Tatin with vanilla ice cream

No previous cookery experience is needed for our courses – we welcome all abilities!

Our Chalet Cooks come away with an armoury of skills to make a great Chalet Cook, a folder of tried and tested recipes, and our ‘Chalet Bible’.
We teach you everything you need to know about working in a Chalet, from knife skills and cookery training to budgeting, cleaning and time management (so you can maximise your time on the slopes!) Not only will you come away feeling confident and excited about your forthcoming ski season, you will be set up with cookery skills for life!
We also offer valuable guidance as well as recruitment assistance and we work closely with several ski companies.
Duke of Edinburgh Gold award students- you can use one of these weeks for your residential course if you stay with us at The Abinger.
